Ingredients

Egg 4
Potato 3
Onion 3
Ginger chopped 1 tsp
Green chillies 3
Garam masala 1 tbsp
Coriander powder 2 tbsp
Chilli powder 1 tbsp
Turmeric powder 1/2 tbsp
1st coconut milk 1 cup
2nd coconut milk 2 cups
Mustard seeds 1/4 tsp
Curry leaves a few
Salt as per taste
Coriander leaves a few


Directions

Boil the eggs well and remove the shell and make slits with a knife.

Cook potatoes in a pressure cooker with salt and water. Allow it to cool. Heat oil in a vessel, add mustard seeds and curry leaves. Add the onions and fry till golden brown. Add the ginger and green chillies and fry a while. Now add the turmeric powder, chilli powder, coriander powder and garam masala and fry till dark in color. Add 2nd coconut milk. Add salt and bring to boil on a slow flame. Peel the boiled potatoes and cut into cubes. Add to the stew. Now add the eggs to the stew. Boil it for a while and add 1st coconut milk and the curry leaves. Stir carefully so as not to break the eggs. Do not boil it. Garnish it with coriander leaves.

Tips of the day
Lemon juice when added to fruit like apples, bananas after cutting, and tossed lightly will prevent them from turning blackish immediately.
