Blueberry Muffins

Ingredients

Flour 2 cup

Butter 1/2 cup

Sugar 1 cup

Eggs 2

Baking powder 2 tsp

Salt 1/2 tsp

Milk 1/2 cup

Vanilla 1 tsp

Blueberries, divided 2 cup

Sugar mixed with cinnamon, for topping


Directions

Preheat oven to 375 degrees F (190 degrees C). Grease muffins tins, or line cups with paper liners.

Cream together butter and sugar. Add eggs, one at a time and mix until blended. Sift together the flour, baking powder, and salt and add alternately with milk and vanilla. Mash 1/2 cup blueberries. stir into batter. Add remaining whole berries.

Spoon the batter into the pan until the cups are 3/4 filled. Sprinkle with sugar/cinnamon topping.

Bake for 30 to 35 minutes, or until the tops are golden brown and the centers are firm.

Tips of the day
Leftover chappathies can be cut into small diamond shaped pieces with a pair of kitchen scissors and deep fried till golden brown. Store in air-tight containers.
