Soya Chunks Manchurian

Ingredients

Soya chunks : 1 cup
Onions (cubed): 1/4 cup
Capsicum (cubed): 1/4 cup
Ginger (finely sliced): 1 tbsp
Garlic (finely sliced): 1 tbsp
Red chilly powder : 1 tsp
Spring Onions (chopped): one bunch
Cornflour : 5 tbsp
Chili Garlic sauce: 3 tbsp
Soy Sauce: 3 tbsp
Vinegar: 2 tbsp
Sugar (optional): 1 tsp
Dried red chillies : 4
Salt : as required
Oil : to fry


Directions

Soak soya chunks in 3 cups of boiling water for about 10 min. When it becomes soft , drain the water and squeeze all the water from soya. Repeat the same process for 2 to 3 times to remove the raw smell of soya.

In a bowl mix corn flour, salt, and chili powder. Add water and marinate the soya chunks in this mixture for 10-15 minutes. Shallow fry them in oil.

Heat some oil in a pan. Add chopped ginger and garlic. Saute for few sec and dry red chillies and green chillies. Then add onion, capsium and salt to taste. Make sure the onions and capisum are half cooked. Add the fried soy chunks to it. Add in all the chill garlic sauce, soy sauce, vinegar and sugar. Adjust the salt and spice. Keep tossing till everything gets well coated. Finely garnish with chopped spring onions.

Tips of the day
While frying Puris or Pakoras, add a pinch of salt and this will help absorb less oil.
