Palak Parantha

Ingredients

1 cup whole wheat flour (Atta)
Water as needed
Salt(a pinch)
Chopped Spinach (2 cups)
Salt to taste
1/2 tsp cumin seeds (jeera)
Asafetida (a pinch)
1/2 tsp crushed red chilly flakes
Oil/ butter.


Directions

Make a soft dough by mixing the whole wheat flour salt and water (add as needed).
Keep this dough aside (covered ) for atleast 10 mins.

Preparing the Spinach filling:

In a pan heat oil(1 tsp oil, kids may enjoy butter).When oil heats ,add cumin seeds and asafetida. When the cumin cracks add the chopped spinach.Add little salt and stir the spinach till it dries up.Cool the Spinach filling.

Making the parantha.

nRoll the dough into 6 balls.Flatten them into small circles and put the spinach filling in the center and wrap the dough around the filling.Make similar balls with all 6 balls.

Keep these balls aside for 2-5 mins.This is to ensure that the spinach does not seep out from the sides.

Then using a rolling pin and rolling surface , roll out the balls slowly and evenly, to preven sticking , dip or sprinkle some whole wheat powder on parantha.

Place the parantha on he warm skillet.When one side gets bubbly or starts getting cooked, turn over.Apply oil/ butter on both sides and using a wooden spatula press the side so that they cook evenly.

Now delicious Palak(spinach) parantha is ready.

Enjoy warm with Raitha / pickle or any vegetable curry.

Tips of the day
To make samosas crisper add some cornflour to the maida for dough.
