Rice Payasam

Ingredients

Basmati Rice 1/2 cup

Milk 4 cups

Sugar 1 cup

Rose water 1 tsp (optional)

Cashew nuts chopped 1 cup

Cardamom powder 3/4 tsp

Saffron a pinch

Almonds sliced a few

Raisins a few


Directions

Take 1/4 cup of milk and add saffron in it and keep it aside for few minutes.

Soak rice for 15 minutes. Grind it nicely using enough water. Mix this rice paste into the 3 cups of milk and mix well. Add saffron.

Boil it in a heavy saucepan. Stirring continously. Add 1 cup of sugar and mix well. Cook over medium heat until a creamy consistency is achieved. Add 1 more cup of milk and again stir continously. Cook until it becomes thick and creamy. Add cardamom powder and chopped cashew nuts and mix well. Remove from fire and add rose water.

Garnish it with the remaining dry fruits. Refrigerate and serve.

Tips of the day
To make dosas more crisp, add a little fenugreek seeds to the urad dal while soaking.
