Cauliflower Soup

Ingredients

Cauliflower florets 2 cup

Cauliflower chopped 1 cups

Milk 3 cups

Butter 1 tbsp

Maida 2 tbsp

Salt as per taste

Pepper as required

Onion 1

Garlic 4 flakes

Ginger 1 inch piece

Celary chopped 3 tsp

Fresh cream 1/2 cup

Directions

Soak the cauliflower in boiling water to kill any germs if present.

Heat 1/2 tsp butter and fry chopped bread pieces and keep it aside.

Take the cauliflower florets and 1/2 cup of water in a vessel and bring to boil. When cooked add i cup of milk and boil it. Remove from heat and allow to cool and then blend in a mixer and make a fine paste.

Heat remaining ghee in a pan,add chooped ginger, chopped garlic and chopped onions and fry for 2 minutes and then add cauliflower bits and fry and fry for a couple of minutes ,on a slow fire till onion turns transperent and cauliflower partially cooked, but still crunchy. Add celary and fry for one more minute. Add maida and fry on a slow fire till raw smell disappears. Add 2 cup of milk and salt and pepper and cook, stirring all the time. Add the paste and cook till thick.

To serve, place soup in a a bowl and pour little fresh cream over it, and fried bread on top and serve piping hot.
