Jackfruit Seeds Snake Gourd Thoran

Ingredients

Jackfruit seeds 2 cups

Snake gourd small 2

Turmeric 1/2 tsp

Red chilli powder 1 tsp

Greated coconut 1 cup

Onion chopped 1/4 cup

Cumin seeds 1/4 tsp

Mustard seeds 1/2 tsp

Garlic 1 piece

Curry leaves a few

Whole red chilly 1

Salt as required


Directions

Scrape jackfruit seeds(chakka kuru), slice it into long pieces and cook them with turmeric, redchilly powder and salt. Ensure it’s not over cooked as it may get mashed.

Heat oil in a pan and add mustard seeds. When mustard seeds crackle, add curry leaves and red chilly and fry for few seconds. When it turns to light brown add the chopped onion and saute for 3 minutes. Add snake gourd(Padavalaga)cut into small lengthwise pieces, little water to cook and salt. Cover it and cook.

Meanwhile grind coconut, garlic and cumin seeds make a coarse paste of it. When it is almost done remove the lid and cooked jack fruit seeds. Put a lid over it and cook for few more minute. Add the ground paste and mix well.Remove the lid and cook for some more time. Stir it occasionally and let it become dry.

Serve hot with rice.
