Vegetable Biriyani

Ingredients

Cilantro leaves 1/4 cup
Garam masala 1/2 tsp
Coriander powder 1/2 tsp
Turmeric powder 1/4 tsp
Red chilly powder 1 tsp
Cinnamon stick 1
Bay leaves 1
Lemon juice 1 tsp
Yoghurt 1 tbsp
Cardamom 5
Cashew 8
Cloves 4
Tomatoes 1
Green chillies 2
Onion 2
Basmati rice 1 cups


Directions

Wash and soak rice for 10 minutes. Heat oil/ghee in pressure cooker. Add clove, cardamom, bay leaves and cinnamon. When it turns colour add onion and fry till golden brown. Then add green chilly, ginger garlic paste and tomato and fry well. Add redchilly powder, turmeric powder, coriander powder and garam masala. Then add vegetables and mix well. Add yoghurt and lime juice and mix well. Add rice and fry for a while. Add 2 cup boiling water and enough salt. Cover the lid and pressure cook for 10-12 minutes in low flame.

Tips of the day
To remove excess salt in any gravy,make some tiny balls of roti dough and let them simmer with the gravy. They absorb excess salt.Remove them before serving.
