Directions
Cut all the vegetables into 2 inch long pieces. Cut them all in the same way same length and thickness as others. Start cooking with the vegitables adding little water to cook and add red chilli powder and turmeric powder and mix well. Cover with a lid and cook in low-medium flame. Meanwhile grind coconut, cumin seeds and green chilly to get a coarse paste. When vegetables are about half done add tamarind juice and salt. Then stir well, careful not to break the vegetable pieces. Again cover it and cook in low-medium flame. When its almost done add coconut paste and yogurt and cook on low flame till all the water is absorbed. Stir well. Pour coconut oil on top and garnish with curry leave.
Serve with Rice.
