Coconut Egg Curry

Ingredients

Eggs 4
Onions finely chopped 1
Capsicum chopped fine 1
Green chillies 6
Tomato finely chopped 2
Ginger 1 inch piece
Garlic 6 flakes
Coriander leaves a few
Coconut oil 2 tbsp
Coriander leaves a few
Grated coconut 1cup
Cumin seeds 1 tsp
Small onions 7
Turmeric powder 1/4 tsp
Curry leaves a few
Salt to taste


Directions

Heat a pan and fry coconut, cumin seeds, small onions, tumaric powder and curry leaves till light brown and grind into a paste .

In a pan, add the coconut oil and when hot, fry the onions till its color changes, then add capsicum, green chillies, and ginger and garlic paste and fry well. To this add the coriander powder and when the raw smell goes, add the tomatoes and the ground paste, salt to taste and mix well. Now add sufficient water and keep to boil. When it boils, carefully break and pour the eggs into it, one by one. When the eggs are done, stir carefully with a wooden spoon. Garnish with coriander leaves and serve.

Tips of the day
Add a few drops of lemon juice and 1/2 teaspoon of ghee while steaming basmati rice to make it whiter and keep the rice unbroken.
