Mango Pie

Moderately sweet dessert with Mango pulp

Ingredients

Mango pulp - 30oz can
Ready made pie crust - 2 -preferably plain flavour(Keebler brand has plain ones)
Knox unflavoured Gelatin mix - 2pkts
Cream cheese - 8 oz
Heavy whipping cream - 1/2 pint
Water - 1/2 cup
Sugar - 1 cup
Vanilla essence - 1tsp


Directions

In half cup of cold water mix the gelatin powder well until it makes a paste. The cream cheese should be defrosted so that it melts and mixes well with the other ingredients. Boil the heavy whipping cream and add the cream cheese to it. Mix it thoroughly along with the gelatin paste until the cheese has melted and mixed well. It will be easier to use a whisker to mix it.

Add the 1 cup sugar to the above mixture and mix well. (If you prefer you can add another half cup sugar so that it is sweeter - I suggest that only if the mango pulp is unsweetened).

Finally add the mango pulp and mix well. Pour this into the two ready made pie crusts. Close the crust with the plastic lid and let it cool in the refrigeartor for half an hour or so.

When ready to be served Slice it into appropriate sizes with a pizza cutter or a knife and serve with fruit topping if preferred.

You could use fat free cheese to have a healthy dessert and also substitute the whipping creamn with milk.

I tried this recipe and came out very well and very tasty.

Tips of the day
For retaining the color of cauliflower while cooking, put some sugar or lemon juice or lemon skin while boling it.
