Ingredients

Black eyed beans 1 cup
White Pumpkin 1 cup
Green chillies 4
Coconut milk 11/2 cup
Curry leaves a few
Coconut oil 2 tsp
Salt to taste.


Directions

Soak the black-eyed beans overnight. Cut the white pumpkin into about one inch thick slices. Pressure cook the beans till 3/4th done. Add chopped pumpkin, salt, slit green chilies and second coconut milk. (In a bowl take little coconut milk and add water and make second coconut milk like consistency). When the pumpkin and the beans are completely cooked, add the coconut milk and simmer for 3?4 minutes. Add coconut oil and curry leaves and mix well.
