Beetroot Curry

A verygood side dish for Chappathi and Roti.

Ingredients

Beetroot grated 1 cup
Onion 1
Tomato 2
Green chilly 4
Ginger 1/4 inch piece
Garlic 2 cloves
Red chilly powder 1 tsp
Coriander powder 1/2 tsp
Turmeric powder 1/4 tsp
1st coconut milk 1 cup
2nd coconut milk 2 cups
Curry leaves a few
Salt as per taste
Oil as required


Directions

Heat oil in a pan and fry onion, green chilly, ginger, garlic and curry leaves till the onion turns it's color. Then add red chilly powder, coriander powder and turmeric powder and fry for a minute. Add tomato and fry well. Then add grated beetroot and fry for a while. Add 2nd coconut milk and cook well. Then add salt and 1st coconut milk and stir well. Donot boil it. Remove from fire and mix well.

really enjoyable! try putting in a cup of yogurt instead of the coconut curry for a more North Indian feel. Also meat with beetroot tastes even better!

Tips of the day
For soft idlies like a sponge do not stir the batter after it has got fermented. Pour the batter as it is.
