Wash the rice well and spread it on a paper towel to dry away all water.

Fry the whole rice in a tawa until it starts breaking slowly (turns to malar)

Grind the rice well into a powder neither very smooth nor very coarse.

To this ground rice add the cardomom powder and mix well. Then add the jaggery and coconut and mix thoroughly. The rice will start sticking together because of the water from jaggery and coconut. Slowly press it into balls of appropriate size with force so that the rice sticks together.

Ariyundas are ready to be served. Use within 3-4 days because the coconut might get spoiled because it is raw.
