Heat oil in a kadhai. Put jeera seeds. Let it splutter. Then add potatoes. Fry a little. Add turmeric and salt. Add peas then add water 2 cook the potatoes and peas well. Keep this mixture aside. When it cools a little, add 1tbs of tamarind chutney and 1tbs of coriander chutney,2 the potato peas mix.mix ths well.

Now spread the pastry sheet, onto a baking tray sprinkled wth flour. Cut it into ur desired shapes or the regular puffs shape,rectangular shape. Fill it wth the potato peas mix. Seal it well. Bake these puffs in the oven at 350F for about 10-15 minutes. Remove from oven once it is golden colour and crisp on the outside. For those who take egg,u can brush,a beaten egg on the puffs for a nice golden colour and texture,before baking it.

Preparation of coriander chutney:-

Grind togather cilantro,a little mint leaves,green chillies,ginger-half inch,half of a red onion,lemon juice-2tbs,sugar 1tbs,salt and water

Preparation of tamarind chutney:-

For those who dont have the readymade one you can store this in fridge for 3 weeks in an airtight container. Its very tasty and can be used alongside wth other snacks.

Oil-1tbs

Cumin seeds-1ts

Ground ginger-1ts

Cayenne pepper-1/2 tsp

Fennel seeds-1/2 tsp

Asofoetida-1/2 tsp

Sugar -1 cup

Tamarind paste-5tbs

Garam masala powder-1/2 tsp

Heat oil in a kadai. Put all the ingredients, exept sugar and tamarind paste, and fry a little. Then add the tamarind paste ,sugar and 3 cups water. Boil it very well until it gets reduced and 2 a sticky consistency.
