Dry Mango Pickle

Ingredients

Raw mango - 1 kg

Red chilly power - 4 tbsp

Turmeric powder - 1/2 tsp

Ginger - 2\" piece

Vinegar - 1 tbsp

Gingelly oil - 2 cups

Mustard seeds - 1 tsp

Curry leaves a few

Salt as required


Directions

Clean and peel the mangoes and chop in to long pieces.

Grind ginger, chilly powder, turmeric power together and mix with salt and vinegar. Add mango pieces to this and mix well. Keep it for 3 hours and then dry this under sun for 8 days or untill it become dry and no water content left.

You can keep this in dry, airtight glass container, it will not get spoiled.

To make pickle

Heat oil in a pan. Sputter mustard seeds and curry leaves. Saute the mango pieces for few minutes. Remove from heat and keep aside to cool. When cooled, store in airtight jars.
