Okra Masala

Ingredients

Okra 20
Grated coconut 1/2 cup
Garam masala powder 1/4 tsp
Chili powder 1 tsp
Turmeric powder 1/4 tsp
Mustard 1/4 tsp
Asafoetida a pinch
Curryleaves a few
Green chilies 3
Oil as required
Jaggery to balance taste


Directions

Clean and cut okra sideways.

Take oil in a pan. When it gets hot, add mustard seeds after they crackle add asatoetida, curryleaves and green chilies. Add the okra to it, add a little water cook. Meanwhile grind together grated coconut, garammasala, chili powder, turmeric powder until fine paste. Check the okra when cooked pour te ground paste into the okra. Let it cook.

Tips of the day
While make any deep fried dish, if the hot oil starts foaming and rises in the pan, add a small piece of tamarind to the oil to prevent foaming and spill over.
