Ingredients

Mango 1
Red chilly powder 1 tbsp
Mustard seeds 1 tsp
Fenugreek powder 1 tsp
Asafoetidapowder a pinch
Sesame oil 4 tbsp
Salt as needed


Directions

Wash and clean the mango and cut it into small pieces. Sprinkle a lot of salt and leave it overnight.

Heat oil in a pan. Add mustard seeds and fenugreek powder. When it starts to splutter, add chilly powder and asafoetida and stir well.
Add the mango pieces and stir well. Remove from fire.

Store in clean, dry air tight containers for future use.

For soft idlies like a sponge do not stir the batter after it has got fermented. Pour the batter as it is.
