Vegetable kurma with coconut

Ingredients

Onions 1
Beans 1/4 cup
Carrots cut into small cubes 1/4 cup
Peas 1/4 cup
Potatoes cubed 1/2 cup
Green chillies 4
Poppy seeds (khus khus)1 tsp
Ginger Garlic paste 1 tsp
Tomato 1
Cumin seeds 1/4 tsp
Shredded coconut 1 cup
Coriander leaves 1 bunch
Salt as per taste
Turmeric powder a pinch


Directions

Take coconut, poppy seeds, ginger garlic paste and grind these to a fine paste with water. Take oil in a Pan. Add jeera. And then add all the vegetables, green chillis and water. let it boil. Add turmeric powder and salt. Check if all the vegetables are cooked and then take the lid off and continue cooking till there is very little liquid. Add the ground ingredients and cook for about 5 mins. Add water if desired.

Instead of poppy seeds you can use cashew nuts soaked in the water.

For getting crisper puris, add little rice flour along with the wheat flour while kneading the dough.
