Sambar

Ingredients

1 cup toor dal
1 cup onion(shallots is best)
1 drumstick
3 lady's finger
1 brinjal
1 potato
2 tomatoes
1 lemon size tamarind
3 tsp sambar masala
Asafoetida as required
1/2 tsp turmeric powder
Curry leaves a few
Coriander leaves a few
Oil as required
Salt as per taste


Directions

First make tamarind water by putting a small piece of tamarind in 1/2 cup water and mix well using hands and keep aside.

Pressure cook dal with 2 cups water or more if required( just an inch over the level of the dal) and turmeric powder and mash well.

Wash and cut the vegetables and cook the it with tamarind water. Once the vegetables are cooked add the mashed dal and allow to boil. After that add the sambar masala and asafoetida. Add enough salt to it. Cook till the gravy becomes thick.. Garnish with coriander leaves.

Heat 1 tsp oil. Add mustard seeds, when they start to splutter, add curry leaves. Add this seasoning to the cooked sambar.

Serve hot with rice, idly or dosha.

Tips of the day
Add a tablespoon or two of white distilled vinegar to water to avoid eggs from cracking when boiling.
