Ingredients

Onion Chopped 1
Green Chillies chopped 1 tps
Ginger 1 large piece chopped
Beetroot 1/4cup boiled
Carrot 1/4 cup boiled
Peas 1/4 cup boiled
Potato 2
Bread crumbs 2 cups
Chilly powder 1 tps
Turmeric powder 1/2 tsp
Gram masala 1/2 tsp
Egg 2
Curry leaves 2 strips chopped
Coriander leaves chopped 2 tsp
Salt to taste
Oil for deep-frying


Directions

Heat a small amount of oil in a pan and add curry leaves, green chilies, ginger, and onion. Fry for a while. Now add all the spices and fry for a minute. Then add all dried vegetables and salt to taste. Mix well. If there is any water, fry till all the moisture is fully lost. Finally add boiled and mashed potatoes and coriander leaves. Mix well. Take it off from the stove. When the mixture is cool make an oval or round shape and keep it aside. Heat enough oil for cutlets to simmer and dip each cutlet in the egg and in the breadcrumbs and into the oil. When both sides are golden brown remove from the oil.

Eat when hot with Coconut chutney or tomato ketchup.

Tips of the day
Removed side crusts of bread can be dried in oven till crisp, cooled and ground to use as bread bread crumbs.
