Ingredients

Rice flour 1 cup
Banana 2
Jaggery 1/2 cup
Salt a pinch
Cardamom powder 1/4 tsp
Roasted coconut pieces 1 tsp
Soda powder a pinch
Oil for deep-frying


Directions

Heat jaggery in pan and add little water. Mix banana and rice powder together with out any lumps and add this in to Jaggery. Add cardamom powder, salt, soda powder. Take the "Appakkara"(special vessel for making unniappam) and add oil to each hole. When it boils, pour the mix. Fry both the sides till golden brown.

Tips of the day
Leftover chappathies can be cut into small diamond shaped pieces with a pair of kitchen scissors and deep fried till golden brown. Store in air-tight containers.
