Directions
Wash bittergourd thoroughly, then cut in half lengthwise and scrape out the seeds. Dice the bitter gourd and add 1/2 tsp turmeric powder and 1/2 tsp salt and mix well. Keep it in a closed container for about 2 hrs. After two hrs, take the mixture and squeeze out water using a towel and pat dry. This will take away most of the bitterness.
Heat oil in a pan and add the bitter gourd and garlic and saute well until it becomes crisp. Then add the fenugreek powder, and red chilli and add salt as required and cook till the bitter gourd is cooked.
Splutter mustard seeds in another pan and then whole red chilli and fry till it turns it color. Add this to bitter ground.
