Ingredients

Tamarind juice 1/2 cup
Corriander Powder 1 tsp
Chilli Powder 2 tsp
Methi Powder 1/4 tsp
Grated Coconut 2 cups
Green Chilli 2
Small red onions 1 cup
Vegetables cut into 1 Inch pieces 2 cups
Green Chilli 2
Mustard Seed 1 tsp
Dry Red Chilli 3
Curry leaves 1 strip
Salt To taste
Oil 6 tbp


Directions

Fry the grated coconut and 5 small onion using some oil in an even heat, slowly till its colour turns into golden brown. Reduce the heat. Add chilli powder, coriander and methi powder Stir for 1 minute. Grind it to a fine paste and keep aside.

Wash the vegetable. Saute the onion, green chilli, and curry leaves in 2 tbp oil. Add the tamarind juice and salt . Cook it till all the vegetable becomes tender. Add the grinded paste. Stir it well. It should not be too watery or too thick. Let it boil. Fry the mustard seed, curry leaves and whole red chillies in 2 tbp of oil and pour it over the curry.

Vegetables like Yam, Karela, Snake gourd, Eggplant, Drumstick, Okra are normally using for making theeyal.

Tips of the day
If you have forgotten to soak chana overnight, just put the chana in a boiling water for an hour. They are ready for cooking.
