Pumpkin Fry
Ingredients
Pumpkin 1/2 kg
Onion 1 big finely cut
Green chillies 2
Oil 2 tbsp
Mustard seeds 1/4 tsp
Whole red chillies 2
Curryleaves a few
Salt to taste
Directions
Peel the skin of pumpkin and cut into 1 inch pieces.
In a pan, heat oil. Add mustards, curry leaves and chilies and fry them lightly on medium heat. Then add chopped onions and green chillies and fry for 10 minutes. Now add the pumpkin pieces and keep frying again. Add salt and keep stirring. Cover it with lid. Let it get cooked like this without adding any water until the pumpkin pieces are soft.
