Brinjal Roast
Ingredients
Brinjal 8
Red chilly powder 2 tsp
Coriander powder 2 tsp
Turmeric powder 1/2 tsp
Ginger paste 1 tsp
Garlic paste 1 tsp
Garam masala 1 tsp
Onion chopped 1
Tomato chopped 2
Green chilly 3
Pepper powder 1/2 tsp
Coriander leaves a few
Salt as required
Oil as needed
Directions
Wash and wipe the brinjal. Make a few slits on both sides and stuff the brinjal with salt, 1 tsp red chilly powder,1/4 tsp turmeric and 1 tsp coriander powder. Keep it for an hour.
Heat the oil in a pan. Place the brinjal side by side. cover it and cook till one side is cooked. Turn and cook the other side gently.Meanwhile heat little oil in another pan add the chopped onion and fry. When it becomes brown, add remaining red chilly, coriander and turmeric powder. Add ginger paste, garlic paste, garam masala and enough salt. Stir it . Add tomato and cook till soft and it starts to leave the oil. Place the fried brinjal side by side .Pour pepper powder. Garnish with chopped coriander leaves.
