Sweet snack, made with whole Green gram, brown sugar and coconut

Ingredients

Green gram (whole) 1 cup
Brown sugar 1/2 cup
Grated coconut 1/2 cup
Cardamom powder 1/2 tsp
Ghee 2 tablespoon
All purpose flour 1 cup
Salt a pinch
Water Enough to make a dough
Oil for deep-frying


Directions

Roast the green gram in a heavy bottomed pan, until an aroma is released. Let it cool. Wash and cook the Green gram by adding a pinch of salt. Make sure that they retain the shape and not get mushy. When cooked, remove the lid and let all the excess water evaporate. Keep it aside.

Heat up a heavy bottomed Pan. Add 2 tablespoon ghee and when it melts, add the brown sugar. Mix well and let the brown sugar melt. Now add the grated coconut and mix well. Add the cooked Green gram. Heat it up for a couple of minutes, mixing well. When its start leaving the surface of the vessel remove from the stove. When cool, add the cardamom powder and mix well. Make small lemon size rounds with the above mixture.

Make a thick mixture with maida and a pinch of salt along with enough water.

Heat oil in a pan. Dip each green gram balls in the maida mixture. Make sure that it is completely coated with the flour mixture. Carefully dip it in the oil and fry till golden brown colour.

Being a fresher in this area, I am not in a position to comment on this.Yet I tried to make the Sukhiyan according to ur recipe and that was really superb.I wish to get a clarification abt the dough.What we add in the dough...salt or sugar or both?? pls do reply me.........

You can make a medium thick batter with Maida adding a pinch of salt. If you need yellow batter either add a pinch of turmeric or yellow color to the batter.

perfect recipe...thanks...my mom loved it soo much and she was soo surprised... :-)

Tips of the day
Lemon juice when added to fruit like apples, bananas after cutting, and tossed lightly will prevent them from turning blackish immediately.
