Ingredients

Egg 4
Cinnamon stick 1
Cardamom 4
Cloves 4
Garlic paste 1/2 tsp
Ginger paste 1/2 tsp
Turmeric powder 1/2 tsp
Coriander powder 1 tsp
Red chiily powder 1 tsp
Green chilly 3
Tomatoes 2
Onion 2
Coconut milk/milk 2 cups
Mustard 1/2 tsp
Salt to taste


Directions

Boil the eggs well and remove the shell and make slits with a knife.

Heat oil in a Pan. Add mustard seeds and curry leaves. Then add clove, cardamom and cinnamon and fry till its color change. Then add onions and fry it till golden brown, add ginger and garlic paste and fry for a while. Add green chillies and tomatoes. Cook it till the tomatoes are well cooked, and the mixture starts to leave the oil. Now add chilly powder, coriander powder, turmeric powder, garam masala and salt. Then add milk and mix well. Do not boil it. Finally add boiled eggs to the gravy. Let it simmer for a few minutes. Garnish it with coriander leaves.

To make brinjal bajjis more crispier, add a pinch of soda to the batter.
