Ingredients

Egg beaten 1
Bread crumbs 1 cup
Boiled eggs chopped finely 4
Potatoes,boiled peeled and smashed 2
Carrots, boiled 1/2 cup
Beans, boiled 1/4 cup
Green chillies chopped 1 tbs
Ginger paste 1/2 tsp
Boiled peas 1/4 cup
Red chilli powder 1 tsp
Garam masala 1/2 tsp
Turmeric powder 1/4 tsp
Lemon juice 1/2 tbs
Salt as per taste
Oil for frying
Chopped coriander leaves 1 tsp


Directions

Heat a small amount of oil in a pan and green chilies, ginger, and onion. Fry for a while. Now add all the spices and fry for a minute. Then add all dried vegetables and salt to taste. Mix well. If there is any water, fry till all the moisture is fully lost. Finally add mashed potatoes, boiled and chopped eggs and coriander leaves. Mix well. Take it off from the stove. When the mixture is cool make an oval or round shape and keep it aside. Heat enough oil for cutlets to simmer and dip each cutlet in the egg and in the breadcrumbs and into the oil. When both sides are golden brown remove from the oil. Serve hot.

Tips of the day
Remove the stems from chilies before storing them, this will keep them fresher for a long time.
