Carrot Squash

Easy to make squash from carrots.

Ingredients

Carrot - 1 kg

(peeled, washed and cut into pieces)

Water - 5 cups

Sugar - 1 1/2 kg

Fresh lime - 12 nos


Directions

1)Pressure cook the carrot pieces with 1 cups of water.
2)Grind this until you get a smooth pulp.
3)Strain it.
4)Boil sugar in the remaining water.
5)When the sugar completely dissolves turn off the stove and allow it to cool.
6)Add lime juice to it when cool and stir well.
7)Then add the carrot pulp to the sugar syrup and stir well.
8)Pour the squash into a dry bottle.
9)Refrigerate.

While making the drink, take 1/2 glass of this syrup and add 1/2 cup cold water.

Tips of the day
Leftover chappathies can be cut into small diamond shaped pieces with a pair of kitchen scissors and deep fried till golden brown. Store in air-tight containers.
