Excellent way to use up leftover cooked white rice

Ingredients

Basmati rice 2 cup
Curd 1 cup
Milk 3/4 cup
Oil 3 tsp
Urud dal 1/4 tsp
Red chilly 4
Asafoetida a pinch
Salt to taste


Directions

Cook rice and keep it aside. Pour 1 cup of curd, 3/4 cup of milk, 1/2 tsp salt to the rice and mix well. Heat oil in a pan and add mustard seeds. When it pops, add urud dal, red chillies and roast fully and then add a pinch of asafoetida. Add this to the curd rice and mix well.Serve hot.

Tips of the day
For getting crisper puris, add little rice flour along with the wheat flour while kneading the dough.
