White Pepper Chicken Claypot rice

For Rice:::::::::

1 cup rice,washed (Basmati is good)

4 cloves garlic,sliced thinly

3 slices of ginger

1 tsp butter

3 pieces pandn leaves,tied

1 1/2 cups water

for the chicken::::::

3 pieces chicken thigh,remove skin and cut into 3

3 tbsp black sauce

2 tbsp white pepper powder

1 tsp light soya souce

1 large onion,sliced

3 slices ginger

2 red chillies,sliced

salt to taste

2 tbsp vegetable oil


1.Heat butter in a pan.Add garlic and ginger and fry till crispy.Add pandan leaves and the rice and mix well.
2.Scoop the rice mix into a claypot and stir in
water slowly.Leave the rice to cook.
3.Heat the oil in a pan.Add onion ,chilli,ginger and chicekn and cook.
4. When chicken is cooked,add white pepper,soya sauce and black sauce to taste.
5.Pour the chicken mix onto the cooked rice,mix well and cook for another 5 minutes.Serve hot.

Tips of the day
When sauting onions add a little salt to speed up the process.You will get the desired golden brown colour shortly.
