Boondi Ladoo

Ingredients

To make boondi:
Besan 2 cup
Rice flour 3 tbsp
Baking soda 1 pinch
Water as required
Raisins for decorating

To make the syrup:
Sugar 2 1/2 cup
Water 1 cup
Turmeric 2 pinch
Cloves 5


Directions

Mix besan, rice flour, baking soda and water and make a batter .The consistency of the batter should be like dosa mix so that it would be easy to make boondi.

Dissolve sugar and turmeric into the water.Put it in medium heat to make the syrup. Sugar syrup should not be over done. Using a spoon take few drops of sugar syrup, when you pour it from the spoon the drop of the syrup should form a thin string like continuous line. If it doesn?t keep it boiling for little time and should see if the sugar syrup forms a thin continuous line. When this is done add fried cloves (without oil) into the syrup so that the flavor blends with it.

Heat the oil in a pan, using a cup pour the batter little by little on a perforated spoon to make boondi. Fry it for 2 - 3 minutes. Do not burn it. Continue with the remaining mix. While frying add the boondies into the sugar, which are done. Put the boondies into it till the sugar syrup is not seen. Make the the boondies into ball when the mixture is hot. When you make each ladoos put one raisin on top of it.

Tips of the day
To remove tomato skin easily, soak them in very hot water for 10 minutes. Remove, peel and then use as required.
