Brinjal Masala

Ingredients

Brinjal 8


Onions 3


Coriander 2 tsp


Red chilli powder 2 tsp


Garlic paste 1 tsp


Ginger paste 1 tsp


Turmeric 1/4 tsp


Lemon size tarmarind


Curry leaves a few


Mint leaves a few(option)


Salt as required





For roasting





4 to 5 peanuts


1tsp saseme seeds


2 tsp coconut powder


5 tsp dhaniya powder


1/4 tsp jeera


3 to 4 mustard seeds


Directions

Roast all of them and make them powder.

Take lemon size tarmarind and put it in water and then take the plup and keep aside.

Heat oil ina pan. Now cut onions and put it in oil. Then add curry leaves, coriander, red chilli powder, salt, garlic paste, ginger paste and turmeric. Fry till 10 minutes.

Now graind all the masala powders and onion masala with adding little tamarind juice.

Then take a pan put some oil and now add brinjals in medium flame. Then add grinded paste and add soem water. Cook till it leaves the oil.
