Baigan Masala

Ingredients

12 small long baigans
2-3 tsp amchur powder
3 tsp dhanajira powder
2 tsp chilies powder
1 tsp garam masala
1 tsp gram flour
Salt to taste
4 tablespoons oil


Directions

Cut 2 vertical slits on the brinjals. Soak in water. Mix all the masala and 2 tsp of oil stuff the masala in the brinjals. heat the oil in a fry pan. When hot place all the stuffed brinjals in pan cover with lid. Cook on a low flame till brinjals become soft.

Tips of the day
While storing the excess dough in the refrigerator coat it with a light layer of ghee or oil. This shall prevent the dough from getting dry.
