Diamond Cut

Easy evening snack made with maida.

Ingredients

Maida 11/2 cups
Red chilly powder 1 tsp
Asafoetida a pinch
Ghee 1 tbsp
Salt to taste
Oil for deep frying


Directions

1.Mix together maida, red chilly powder, asafoetida, ghee or oil , enough salt and knead well to make a soft dough.

2.Make balls off the dough and roll them into very thin and large chappathis.

3.Make cuts using a knife by drawing a number of parallel lines to cut into diamond shaped pieces.

4.Deep fry in oil. Turn it over, when fried drain the oil by putting on a paper.

Sweet version

Make a sugar solution by heating up 1 cup sugar and 1/4 cup water till to get a threadlike consistency. Add fried diamond cuts into the sugar syrup. Stir it well and allow it to cool. store it in an airtight conatiners.

This recipe does not tells about diping the diamond cut in the sugar syrup, which is the essential part of it:(

Tips of the day
To neutralize burnt food odors in the house, mix 1/4 cup whole cloves with 1 cups water in a pan and bring to a boil. Simmer cloves for 30 minutes.
