Ingredients

Carrot grated 2 cups
Turmeric 1/4 tsp
Green chilly 3-4
Garlic 1 small clove
Coconut oil 1 tbs
Mustard seeds 1 tsp
Cumin seeds 1/4 tsp
Curry leaves 1 sprig
Coconut shredded 1/2 cup
Onion chopped 1/4 cup
Salt as per taste


Directions

Heat oil in a pan and add mustard seeds. When mustard seeds crackle, add curry leaves and fry for a few seconds. When it turns to light brown add the chopped onion and saute for 3 minutes. Add the grated carrot and salt.Stir for 2 minutes. Cover it and cook. Alow the carrot to get cooked in its own water. Meanwhile,grind coconut,green chilly, garlic and make a coarse paste of it. When it is almost done remove the lid and add the grinded paste. Put a lid over it and cook for 2 minute. Stir it occasionally and let it become dry.
