Ingredients

Raw rice flour-2cups


Grated coconut-2 cups


Eggs-2


Sugar-2 tbps


Sesame seeds-2tsp


Salt-a pinch


Vanilla essence-1/2 tsp


Oil for frying


Directions

1. Extract the milk from the grated coconut and mix the flour with it.
2.Whisk the eggs stiff and add to the batter with sugar,sesame seeds,vanila essence and salt.(use less sugar ....otherwise the batter will stick to the mould)
3.Take a small portion of the batter in a small vessel.Put the achappam mould in very hot oil kept on fire.
4.Dip 3/4 of the mould into the batter when the mould is very hot and then dip into hot oil.The achappam will fall off into the oil by itself.Turn it over,when fried drain the oil by putting on paper.

tried achappam- it came out well. but it would be better to add only the white part(fluid) of the egg, don't add the yolk, b'coz it gives a bad smell to achappam.

Tips of the day
Remove the stems from chilies before storing them, this will keep them fresher for a long time.
