Kootu Curry

Ingredients

Black Chana 1/2 cup
Vegetables 1 cup
Grated Coconut 1/2 cup
Coconut Oil 2 tsp
Coriander powder 1 tsp
Fenugreek powder 1/4 tsp
Whole Red Chilli 4
Mustard seeds 1/4 tsp
Pepper powder 1/2 tsp
Turmeric powder 1/2 tsp
Cumin seeds 1/4 tsp
Curry leaves a few
Salt to taste.


Directions

Wash and soak the Chana overnight. Boil the chana in a pressure cooker. Chop the vegetables and cook it in a separate container with turmeric powder and salt. Cook it in little water by covering it with a lid. Keep on stirring and see that there is enough water.

Take little coconut oil in a pan, add grated coconut and roast till it becomes golden brown in color add coriander powder, Fenugreek powder, Red chillies and Cumin seeds. When they are golden brown in colour. Grind all these in a mixer adding the pepper powder with little water to make a nice paste.

Once the vegetables are done, add the cooked chana to this. Mix well and add the prepared paste. Cook for some time till the raw taste is gone.

Heat coconut oil in a pan and add the mustard seeds. When they splutter, add curry leaves and little grated coconut and fry till red in color. Pour over this to the Curry.

You can use vegetables like raw banana, white pumpkin, beans, yellow pumpkin, snake gourd etc.
