Brinjal Fry

Ingredients

Big green or purple brinjals -2
Oil - for frying
Turmeric powder- 1/4 tsp
Chilli powder – 1 tsp or to taste
Salt as required
Curry leaves a few


Directions

Wash and slice the brinjals into thin round slices.

Marinate brinjal slices for 20 minutes with chilly powder, turmeric powder and salt.

Heat oil in a pan and fry the marinated brinjal. When it is almost done add curry leaves and fry it along with the brinjal. Remove from the oil and place them on paper towels.
