Yellow Pumpkin Payasam

Ingredients

Pumpkin - 2 cups
Coconut first extraction - 1 cup
Coconut second extraction - 2 cups
Grated jaggery - 500 gm
Sagoo(optional)- 1/4 cup
Ghee - 2 tbsp
Raisins - 25 gm
Cashew nuts - 25 gm
Coconut pieces - 25 gm
Cardamom and cumin powder - 1 tsp


Directions

Prepare jaggery syrup by pouring 1 cup of water to 500 gm grated jaggery.

Cut the pumpkin into cubes. Pressure cook the pumpkin pieces in 1/4 cup of water. With the back of a spoon mash the cooked pumpkin pieces.

Heat 2 tsp of ghee. Add mashed pumpkin and fry till all the water evaporates. Keep stirring. Add sagoo and mix it well for few minutes. Add jaggery syrup and bring to boiling point. Stir well. Reduce heat and put in the second extraction and cook till thick. Add first extraction and cardamom and cumin powder and heat to simmering.

In a Pan heat the ghee and fry the cashews, coocnut pieces and raisins and add it to the payasam.
