Pressure Cooker Cake

Ingredients

All purpose flour (maida) - 1 and 1/2 cup
Powdered sugar - 1 cup
Egg - 1
Refined oil or plain butter - 1/2 cup
Baking soda - 1 tsp
Milk - 1 cup
Vanilla essence - 1 tsp


Directions

1.Shift all-purpose flour, soda and baking powder.
2. Beat the egg very well until it becomes lighter.
3. Mix sugar and oil together and stir them pretty hard till the mixture becomes light and fluffy.
4. Add the beaten egg to this mixture. Mix well to blend all ingredients thoroughly.
5.Mix the flour and stir. Repeat the process till all the flour is used.
6.Add vanilla extract and beat. Now beat with cut fault method for 10 -15 minutes. See that the batter falls from the spatula or add a little milk to make it smooth.
7.Grease the baking tin with oil and dust it by sprinkling all purpose flour over greased surface evenly.
8.Pour the mixture into the greased baking tin.
9.Heat the cooker in a stove or cooking range on high heat for 2 minutes. Do not pour water in it. Place the cooker dish with holes, at the bottom of the cooker. When the cooker is well heated, place the dish with the cake batter inside, on top of the cooker dish. Close the cooker with the lid. Do not put the weight. Lower the flame after 2 or 3 minutes. Let it cook for 40 minutes, then switch off the heat. Do not open the lid immediately.

Tips
----
It may take 5 or more trials to get the right method of making cakes in pressure cooker. When you make the first time, you may need to open the pressure cooker and check for the doneness a few times. Then you will know how many minutes your cooker takes to bake a cake. You will get the hold of it very soon and you can make it nicely.
