Tomato Rice

Ingredients

Cooked basmati rice 3 cups
Tomato 4
Cloves 3
Cashew 6
Cinnamon stick 1
Cardamom 2
Onion 2
Red chilly powder 1 tsp
Turmeric powder 1/4 tsp
Coriander powder 1/2 tsp
Garam masala a pinch
Salt to taste
Oil 2 tsp


Directions

Cook rice separately and allow it to cool. Cut tomatoes and onion into small pieces. Heat oil in a pan and add cloves, cinnamon, cardamom and cashews. When they get roasted and begin to smell, add cut onions and tomatoes. Add salt, red chilli powder, coriander powder and turmeric powder and fry until the oil comes on top. To this add 3 cups of cooked rice and mix well. Add a pinch of garam masala powder. serve hot.
