Vegetable Stew

Ingredients

Beans 1 cup
Carrots 1 cup
Peas 1 cup
Potatoes 1 cup
Onions sliced 2
Cardamoms 4
Cloves 4
Cinnamon stick 1"
Green chilli 4/5
Juliennes cut ginger 2tsp
Black pepper coarsely crushed 1 tsp
Coconut milk 2 cups
Water 2 cups
Curry leaves a few
Salt to taste
Oil as required


Directions

Cut the vegetables in 1/2 inch pieces.

Heat the oil in a pan. Add the cardamoms, cloves and cinnamon. Fry for a few seconds. Now add the green chillies, ginger and the sliced onions. Saute on medium heat for 2 minutes or till the onions are transparent and soft. Add the mixed vegetables, curry leaves, salt and water. Cover and cook on low heat for 15 minutes or till the vegetables are cooked. Add the pepper and mix well.Finally add coconut milk. Simmer on very low heat.Do not boil it.
